Gozleme – Servings 30

Our Easter break at Turkey brought us closer to rich cultural experiences. One of them was Gozleme, a food dish we savoured every day by the beach side at Antalya.

It was a no brainer that this was going to be my evening snacks for our next potluck. We are 6 couples with 11 kids which means lengthy hours of sweat and love in the kitchen to make Gozleme. Since I had eaten them freshly made the only apprehension for me was to prepare a bulk quantity in advance to serve it the next evening at a friends place.

Spoke to few of my friends and it was clear that there is no chance I can roll them out and stuff it and fry it to serve fresh on the day. They beautifully encouraged me to give it try.  Our potluck fine starts at 12:45 p.m. so an evening before was my lovely cooking day. Researched the web to find out about storing tips for stuffed gozleme, cooked gozleme, only dough etc.

Lots of ideas on how to store it and the best option to me  was to store cooked gozleme although I still needed assurance and to be calm I stepped out and reached out to the turkish cooks at a Turkish kebab joint nearby. Discussed my Gozleme plan. Their feedback matched and that pushed up my confidence. So I unlocked those belts in my mind and full spirited prepared Gozleme and stored them in freezer bags (5 Gozleme in one big freezer bag) in the refrigerator for the next day.

At my friends too kept them chilled in her fridge. Warmed them in the oven for say 30 minutes before serving and then they hit the hungry heads – kids finished them with licks and adults loved them. SO I am thrilled to share the recipe!

Ingredients:

For Dough

  1. Self-raising flour – 1.25kg
  2. Greek Yoghurt – 1kg
  3. Olive oil – as needed
  4. Pinch of salt

For filling:

  1. Minced Lamb meat – 1 kg
  2. Coriander leaves – 1/2 bundle pack
  3. Mint leaves – 1/2  bundle pack
  4. Spices (the amounts I took based on my regular cooking skills, cannot provide measurements)
    1. sumac
    2. cinnamon powder
    3. Turmeric
    4. Red chilli powder
    5. Black pepper powder
    6. Cumin seed Powder
    7. Coriander Powder
  5. Ginger paste
  6. Garlic paste
  7. Feta cheese
  8. Cheddar cheese
  9. Tomato ketchup (optional)
  10. Salt (as per taste)
  11. One onion finely chopped
  12. Bell peppers mixed( green yellow red)

Method:

For Dough:

  1.  Empty the flour in a big bowl
  2. Add salt as per your taste and mix
  3. Add yoghurt in batches and mix until all of it is added.
  4. Now knead it into a soft and sticky dough
  5. Add some olive oil at the end.
  6. Cover the bowl with a cling film and keep it aside for 30 minutes. I had kept it for 4 long hours.

For Filling:

Meat:

  1. Take a pan and put 1 spoon oil
  2. Saute the chopped onions until they are translucent and have turned soft.
  3. Now add all the spices + garlic + ginger paste
  4. Saute for 30 seconds
  5. Add lamb Minced meat to it.
  6. Add salt
  7. Mix well and let it cook.
  8. Once the minced meat is cooked then empty it into a big bowl. The meat should be dry after cooking.
  9. Chop coriander leaves and mint leaves and add them to the minced meat and mix it well.
  10. Crumble feta cheese and keep ready in a bowl

Bell peppers:

  1. Cut the bell peppers into thin strips.
  2. Heat a pan with 1tbsp oil on medium flame
  3. Add garlic, salt. pepper and bell pepper strips
  4. Saute them for say 2-3 minutes or until it turns tender.
  5. Empty them into a bowl.

Preparation:

  1. Divide the dough into even balls of the same size.
  2. Roll out each dough ball using a rolling pin. It should sit thin so that u can see the other side of the surface
  3. The dough may be sticky so use flour on the surface for making it an easy job.
  4. Now start your filling in any order
    1. minced meat
    2. cheddar cheese
    3. feta cheese
    4. bell peppers
    5. squirts of ketchup
  5. Now fold the dough into a semi circle
  6. gently tap the curved edge with a spoon or your fingers to seal it.
  7. Now brush some olive oil on one side of the package
  8. Heat the frying pan and put the oiled side on the the pan to cook first.
  9. Brush oil on the other side.
  10. Cook each side until it turns golden
  11. Gozleme are ready, cut them into three and serve with lemon and a glass of Ayran!

 

You can try out different stuffings, there are so many innovative ideas.

Turmeric and Sandalwood

So where ever I look I keep analysing. It may not result in a resolved understanding but yea thoughts dont tire me.

Now ofcourse I wont spare my own self, so I do look at my face everyday in the mirror as a subject to study and analyse. I watch how it keeps changing so subtly.

Lately a red patch on my nose and cheeks was flaring up loud –  no it does not look rosy..it looks a bit unusual.

My different theories in association with my medical condition, I knew what had likely happened.

This only made me question what can I actually do to be in control?

1: sleep well

2: worry less

3: love without hesitation.

4: be realistic with everything I do – aim high, be realistic. As a parent life is challenging and very very tough sometimes rough..dont feel that u have sacrificed, enjoy them. Also understand that everyone understands.

5: drink water (warm)

6: be watchful of what u eat.

7: wear a hat always

8: wear sunscreen everyday

9: moisturise

10: oil ur hair,  head massage twice a week

11: exercise or run or walk or do a sport

12: read, read, read.

13: Turmeric powder + Sandal wood powder + rose water + olive oil + chickpea flour + milk – make a paste and apply it on your face everyday. let it dry and then rinse it off with water.

14: practise minimialism with pride

15: talk to your self .

16: be thankful, start your day as a blessing.

Swimming

All along zahra accompanied Amreen for her swimming lessons. Very hopefully she would always be geared up dressed in swim suit and carrying her arm bands. Occasionally she would have a dip with me in the pool when I would feel jumpy and mostly she would please herself with just a swim shower.

Yesterday evening her dream came true when she went for her first swim lesson.

I am very happy to see her drenched in water delight.

Zahra writes

She is fond of writing and colouring.

She can paint anything and everything so we have put down firm rules no sofas, no walls, no furniture and actually the list is very long..poor child is absolutely trapped.

So she very happily takes the marker pen and colours her hand and eagerly waits for her dad to come home.

Although she forgets to show off to her dad when he is home.

The following day when dad takes her to the washroom to freshen up..finds the blue palm and asks “Why did you write on your hand, is it a paper?”

Zahra says “Yes pappa it is”

Hussain : “How”

Zahra : “When I play rock, paper, scissor”

Hussain is speechless!

 

Amreen feeds Zahra

Zahra finishes her dinner tonite with one chapati, as she feeds herself she stops when she thinks she is done.
Although it would be a great satisfaction if she ate more but I dont overdo forcing.
Noticing this Amreen comes to me as I was about to do the dishes and says mum I would like to feed Zahra one more roti.
I looked at Zahra with a question and she too confirmed. So negotiation between the girls was a done deal.
So there AMreen took a plate with one chapati and some dal.
Now showtime.
Surprisingly to me Amreen took her shape cutters for modelling clay/playdough to make small cutouts from chapati.
Chapati bits in forms of butterfly, tree, stars….
Those were dipped in daal and fed to Zahra by Amreen. Every feed was an enthusiastic gulp with a short wow fact along.
And a second roti achieved.
Wo boy! I am in love.

 

2018 New year experiments

  1. Diet – give up roti and rice. More salad
  2. Fasting every Fridays and Mondays
  3. Minimalism lifestyle. Wearing 2 outfits at the max to work in a week.

Week 1: Accomplished all the three above and it was my yellow look for the first week of the year 2018 at work. Hope this continues well through the year. fingers crossed. Open mind. Wearing same outfit everyday to work did not really bother me – I am free.

Kaju Katri

The story I made up to inspire my kids to write.

Once upon a time there lived a boy called Kajukatri with his parents in an apartment that was crumbled in concrete forest of a very large city.  Kajukatri is an Indian sweet dish that is mainly prepared on Diwali. His parents were very fond of this sweet and named their son after it with the belief that their son will bring sweetness to anyone who would have a taste of him 🙂

Kajukatri was a very loving eight year old boy who was very observant of his surroundings and he loved making special effort to give pleasant surprises to people around him. He would make cards, do chores, sing songs, help without asking etc.

Kajukatri observed his mum daily just to study how she is and her ways of life and his understanding convinced him to believe that his mum gives a lot unknowingly without being appreciated.

He got very involved in the context of his mum’s daily decisions and was motivated to write them down. With this intention his started painting his mum through his choice of words.

Every night before retiring he would spend 10 minutes gazing outside his bedroom window and reliving the vivid flash of all that he remembered from the day. Then he would sit down with his diary, flushing out the details keeping focus on his mother as the subject/object  :-). He would also provide either humorous or very well reasoned analysis on the events he described.

So he continued this for a year and had managed to finish all the pages from his diary. He was surprised that he had developed a closer understanding of his mother’s expectations and could effortlessly make her smile and also improvise her expectations.

So it was his mum’s birthday and he thought this diary will be a good gift but then he had apprehensions what if his mother finds it boring or unimaginative or dislikes so he first asked his dad to read it and giftproof the idea 🙂

His dad was stunned with joy after reading through the narration of daily accounts of his wife and was very very happy to tell Kajukatri to go ahead and wrap the book nicely and present it.

So Kajukatri changed the diary cover to look like a reading book and titled it “The craziness that flowers”. On the day of his mum’s birthday gifted to her with a lot of excitement. His mum was surprised to receive a book as a gift and felt really happy to think to herself that her son thinks she would enjoy reading or needs to read 😉 and gave him a huge hug.

Days past by waiting  for his mother to get back to tell him what she felt but mum did not say anything. He almost lost his heart after a week or so and cried to his father saying his mum did not like the book and it was a bad idea. The dad realised that mother has not read it yet and felt really sorry. He asked Kajukatri to have patience because sometimes feedback takes a while and assured him that mother is still in middle of reading.

After this the father rushed to his mother for her to know the story behind the book. She cried to herself  with guilt she thought it was a book from the store did not know Kajukatri had invested a year in it. She started reading it almost immediately, it took her couple of hours but she was on the top of the world and that made her do something extraordinary. She resolved to publish his writing and approached a number of publishers with a lot of pride and had prepared her talk as to how she would convince the publishers. She won a deal with one big publisher and got this book published.

it took almost 2 months for his mother to sort all of this and get a first paycheck in the name of Kajukatri and this book in the stores.

His mother then on one late evening presented Kajukatri his first paycheck with the published hard copy of his writing. Kajukatri was amazed. Mother told him it was a magical gift for her. She was extremely pleased with his thought process and hardwork  for which he deserved a wider recognition. She hugged Kajukatri and told him that his boook was outstanding and was very very happy to read about herself through his world of perception. Kajukatri was very relieved that his mum loved his book and was very motivated with the recognition his mother could get for him.

The money did flood Kajukatri’s piggy bank and so he had to open a bank account! 🙂

Kajukatri continued writing as a hobby.

Reaction at home: Amreen says to me – I want to publish my story too and she has just started building a context on her storyline.

Although to motivate her to complete it will take more such stories 🙂
